I recently made banana bread for the first time in a while and now I’m obsessed! So, to make an excuse to make another loaf i decided to share it with you…
I got this recipe from Tanya Burr’s baking book ‘Tanya bakes’. It’s amazing! Your life will change if you get this book, plus you may gain a few pounds because you’ll be making everything inside of it. If you would like to get the original version of this recipe and loads more by her book!
350g of peeled ripe bananas
150g of softened unsalted butter
160g of dark brown soft sugar
200g of plain flour
1 teaspoon of vanilla extract
2 1/2 teaspoon of baking powder
1 teaspoon of salt
2 large eggs 200g of chocolate chips (optional)
Grease and line with baking paper a 22cm loaf tin, also preheat your oven to 170º/325ºF/gas mask 3.
Peel the ripe bananas and mash them up, once they are all mashed put it to the side.
Cream the butter and sugar together until it’s all light and fluffy. Then mix in the vanilla extract and eggs. After the wet ingredients are added, put in the flour, salt and baking powder. Mix it all together until smooth.
Add the mashed banana into the cake/ batter mixture, mix until combined. Then this step is optional and not in the original recipe but i LOVE to add chocolate chips. Add 150g of the chocolate chips and save the 50g for later. Mix the chocolate in thoroughly until it is completely dispersed into the mixture (i sound so fancy!).
Pour the mixture into the greased tin, i then also make a few changes to the recipie buy adding the 50g of left over chocolate chips on top on the mixture and then a good sprinkling of the sugar over the chocolate chips, so when it has cooked it creates a crunchy top. Put in the pre-heated oven for around 40-45 minutes. Or until it is risen and golden, and a skewer poked in the centre comes out clean. When it is cooked place the tin on a cooling rack to completely cool.
Finally when it has cooled down, tuck in!
